     Mexican Cobb Salad with Roasted Tomato Dressing

    This Mexican Salad is bursting with color and texture and everything you love about a Cobb Salad including grilled chicken, bacon, corn, cherry tomatoes cheese and Roasted Tomato Dressing. Truly irresistible!

    Mexican Salad Do you WISH you were a salad lover but just can’t get excited about them?

    Or maybe you LOVE a great salad but need some inspiration?

    This Mexican Cobb Salad is just the ticket.

    Loaded with great, fresh flavors, wholesome filling ingredients and a south of the border spin on a regular Cobb Salad!

    Tested on adults AND kids with rave reviews (and requests for seconds).

    What is a Cobb Salad?

    A Cobb Salad is, it’s a main dish garden salad usually featuring lettuce, chunks of chicken, tomato, bacon, hard boiled eggs, avocado with a Roquefort dressing.

    It’s filling and packed with great flavor and textures.

    Mexican Salad

    Like any salad, a Cobb Salad is open to interpretation and I love a Mexican version.

    It’s easy to change up a traditional Cobb Salad to include favorite ingredients for a Mexican inspired flair!

    Mexican Salad Ingredients

    You’ll recognize typical Cobb Salad ingredients and some delicious additions too.

    All ingredients are easy to find and put together.

    • Red Leaf Lettuce
    • Grilled Chicken Breast
    • Bacon
    • Corn
    • Cherry Tomatoes
    • Shredded Mexican Blend Cheese
    • Roasted Tomato Dressing

    Optional Ingredient ideas:

    • Sliced avocado
    • Sliced pickled jalapeno peppers

    Ingredient Notes

    Lettuce

    I used Red Leaf Lettuce for the texture, color and great flavors. It is a softer lettuce so each to grab a forkful with the other salad ingredients.

    You can swap in any other lettuce you love, like Butter Lettuce for another soft, tasty lettuce. If you love crisp lettuce, I recommend iceberg lettuce.

    Grilled Chicken Breast

    Grilled Chicken Breast adds extra flavor to this Mexican Salad. You can use leftover grilled chicken, or quickly cook boneless chicken breasts in a griddle pan.

    Many grocery stores with grab-and-go prepared foods include grilled chicken breasts.

    A key is to warm it slightly before adding to the Cobb Salad for best flavor!

    Rotisserie chicken or shredded chicken can also be substituted.

    TIME SAVING TIP: You can purchase frozen bags of grilled chicken strips. Keep one in your freezer, thaw and warm some in the microwave and you can make this salad any time!

    Bacon

    The bacon should be warm when added to the Mexican Salad for best flavor.

    TIME SAVING TIP: Bags of real bacon pieces can be purchased at the grocery store. They are already cooked.

    For a shortcut keep a bag in the refrigerator and gently warm the needed amount in the microwave before adding to the salad. Do not overcook it!

    Corn Kernels

    Fresh, canned or frozen and thawed corn kernels can be used.

    If using fresh, I love this corn zipper to quickly remove them from the corn cob.

    Shredded Cheese

    This ingredient is a time saver. Buy prepared grated ‘Mexican Blend’ cheese in the dairy department.

    If you would prefer to make your own, grate medium Cheddar Cheese.

    Roasted Tomato Dressing

    To me the salad dressing is always the icing on the cake (or the salad in this case).

    This easy salad dressing recipe pulls all the flavors of this Mexican Salad together.

    The recipe includes some suggestions to make the dressing spicy too!

    If you are in a time pinch and just can’t make it, choose your favorite dressing instead.

    Note on Measurements

    I think garden salads are more of an art than a science.

    If you want more of an ingredient that is listed in the recipe, add it! You can’t make this Mexican Salad ‘wrong’.

    Easy to Pack for Lunches

    This salad is do delicious and great for packing in back-to-school lunches too.

    Having a good serving of grilled chicken for protein keeps one full!

    I love this salad container that keeps the dressing separate. This salad container has a snap on ice pack.

    Both containers are in constant use in my household.

    How to Make this Mexican Salad – Step-by-Step

    STEP 1: Place the lettuce in a large dining bowl.

    STEP 2: Layer all the remaining ingredients on top of the lettuce.

    STEP 3: Drizzle on the dressing and enjoy!

    Serving Size

    This recipe makes one main dish serving.

    The recipe can also be divided into two side salads instead.

    If you want to make more main dish servings, multiply the salad ingredients by the servings you’d like.

    Mexican Cobb Salad

    Mexican Cobb Salad is a hearty main dish salad that fills the senses as well as one's stomach. This recipe is intended as one main dish although can be divided as two side salads. Additional salads may be prepared by multiplying the ingredients by the number of main salads desired. The total time does not include making the dressing (about 30 minutes).

    Ingredients

    • 1 1/2 cups Red Leaf Lettuce; rinsed , dried and torn into bite-size pieces
    • ¼ cup chopped Grilled Chicken (shredded chicken or rotisserie chicken may be substituted)
    • 1 slice thick Bacon , cooked until done (but not crisp) and chopped
    • 5 Cherry Tomatoes , rinsed
    • 2 tablespoons Corn Kernels (fresh or frozen and thawed)
    • 2 tablespoons Shredded Mexican Cheese blend (or sharp cheddar)
    • 2-4 tablespoons Roasted Tomato Dressing

    Instructions

    • Place the prepared lettuce in a large dining bowl.
    • Top with the chicken, bacon, tomatoes, corn and cheese. Drizzle on the dressing and serve.
