- Beef Stew Meat (my butcher uses Top Sirloin)
- Garlic Cloves
- White Spanish Onion
- Green Bell Pepper
- Potatoes
- Low Sodium Beef Broth
- Dry Sherry or Madeira (note: if you prefer not to use any liquor, substitute ½ cup more beef broth)
- canned Tomato Sauce
- canned Diced Tomatoes
- Paprika
- Distilled White Vinegar
- Oregano
- Cumin

Total cooking time for Cuban Instant Pot Beef Stew is about 45 minutes, in addition for the time to allow the Instant Pot to come to pressure.
The Meat/Stew function is used which is pre-programmed for 35 minutes. The meat is seared, and the vegetables sautéed for a few minutes before the Instant Pot Beef Stew is sealed and cooked.

Preparing Cuban Instant Pot Beef Stew (Carne con Papas) is easy.
All steps of this recipe are done in the Instant Pot making for easy clean up!
- Using the Sauté function, sear the stew meat is seared on all sides and set aside.
- Sauté the garlic, onion and green pepper.
- Return the meat and any juices to the Instant Pot, along with the remaining ingredients.
- Using the STEW function, allow the instant pot beef stew to cook
- When cooked, allow to sit 10 minutes then perform a Quick Release

Cuban Instant Pot Beef Stew (Carne Con Papas)
Ingredients
- 2 tablespoons Olive Oil
- 2 pounds Beef Stew Meat (my butcher uses Top Sirloin)
- 4 medium Garlic Cloves , peeled and diced
- 1 medium White Spanish Onion , peeled and chopped
- 1 medium Green Bell Pepper , cored and chopped
- 2 medium Potatoes (approximately 1 pound), peeled and cut into 3/4-inch cubes
- 1 cup Low Sodium Beef Broth
- ½ cup Dry Sherry or Madeira (note: if you prefer not to use any liquor, substitute ½ cup more beef broth)
- 1 8-ounce can can Tomato Sauce
- 1 14.5-ounce can can Diced Tomatoes , undrained
- 1 ½ tablespoons Paprika
- 1 tablespoon Distilled White Vinegar
- 1 teaspoon Oregano
- ½ teaspoon ground Cumin
- 6 qt Instant Pot
Instructions
- Plugin the power cord of the Instant Pot and when the LED display reads ‘OFF’ (in standby mode), press the SAUTE button (with the lid off).
- Add the olive oil and the stew meat. Brown the stew meat, allowing it to sit between stirring to develop a sear on each side (note: it can be done in two batches.). Remove and place the meat on a plate or mixing bowl.
- Add the garlic, onion and green pepper to the Instant Pot and sauté for 3 minutes.
- Add the beef (with any accumulated juices) and all the remaining ingredients to the Instant Pot. Seal and select MEAT/STEW (which is preset for High Pressure for 35 minutes).
- When cooking is complete, wait 10 minutes then do a Quick Release. Serve over rice.

I am 72, got the Instant pot after reading all the awesome tips from cooks. I am Cuban & was always terrified of the old pressure cooker & the noise, also the stories about the vent clogging and bursting. I use mine at least 4 times per week. It is great also for making spicy chicken wings etc. Keep up the good work, and thank you for this recipe.

Hi Irene! I think any of us who used or were around those old pressure cookers are traumatized! I still have a vivid memory sitting at the kitchen table as my mom was using one and the bobbly thing at the top flying off and hitting the ceiling!! I had to get over that with my Instant Pot. I used to own an ancient stove-top pressure cooker, the one my mother had when I was growing up. That thing scared me to death, even though I did manage to do some canning with it. I know a lot of people really like the Instant Pot, but I have no interest – I’m fine with the old, slow ways of doing things. Maybe it’s because I’m old and retired, but a big part of it is that it is frequently not the cooking time that causes me difficulty, but rather, doing all the prep. And that wouldn’t change with a pressure cooker.

To get your IP up to pressure quicker, you can “Pre-heat” your IP by hitting the SAUTÉ button initially, and let it heat up. After it warms sufficiently, you then hit OFF and then pop your ingredients in and hit STEW, or whatever it is you’re cooking. Voila…less waiting time to reach pressure. I found this on YouTube in a video called something like , “10 IP tips”. Good luck, have fun with it, and post IP recipes often! :-). Ps. Betcha you’ll be tempted to purchase the 8 soon. Ha!

Yummmm…another one for my Toni file! I use my IP almost every day, sometimes multiple times a day. I can see why a busy family might want more than one. This sounds like a perfect winter time stew, have everything but the beef!

I’m laughing Cynthia because all of us who grew up with the screaming stove-top pressure cookers are now traumatized it seems! I will say I too was scared. Read the manual, did the test run it suggests. Still felt like I was going to mess something up. The next recipe I’m going to share this week has a funny story. In short I forgot to put the seal back in the lid and couldn’t figure out WHY the pressure wouldn’t release. I’ve sense made more recipes and now it feels like an old friend. One that isn’t going to blow it’s top potentially scarring me for life!
