Easy Brownie Bites Treats
Brownie bites are two-bite brownies that are delicious. Think brownies baked in a mini muffin pan. They have a fudgy texture and are a favorite dessert.
We’ve used these mini chocolatey brownies and turned them into a fall themed great treat that’s easy to make. They are a delight to serve for gatherings and parties or just to celebrate the season.
A number of companies make fudgy brownie bites so unless you want to, you don’t have to bake brownie bites yourself for this recipe.
This is a perfect recipe when you want something delicious and fun without toiling in the kitchen for hours.
Recipe Ingredients + Notes
We made 20 acorns. Any amount can be made. You’ll need the same amount of brownie bites, vanilla wafers and chocolate chips for the top. If making alot more you may need more chocolate chips to melt as well.
Brownie Bites. They can be store bought or homemade. More details below.
Vanilla Wafers. Use regular size Nilla Wafer brand or gluten-free vanilla wafters (we used Kinnikinnick vanilla wafers).
Semi-sweet Chocolate Chips. You’ll need 1/2 cup plus 20 chips for the acorn tops.
Chocolate Sprinkles. These will go on the top of the cookie.

- Small bowls

Store bought Brownie Bites
Multiple brands make chewy brownie bites and you can find them easily at the grocery store.
Here are a couple options we love:
Entenmann’s Little Bites are a great option (gluten). We love Canyon Bakehouse Brownie Bites for making them gluten-free but there are other GF brands too.
How to make Homemade Brownie Bites
If you’d prefer to bake the mini brownies yourself you can use one of your favorite brownie recipes or any store bought mix.
Use a fudge brownie mix or homemade brownie recipe.
- Prepare the batter as directed on the package.
- Prepare a mini muffin pan by spraying the mini muffin cups with non-stick cooking spray or paper liners.
- Fill the mini muffin tin cavities 2/3’s full with the brownie batter. Using a small cookie scoop makes this fast and easy.
- Bake brownies in a 350 degree oven for 18-21 minutes.
- Cool for 10 minutes in the pan before removing them.
- Allow to fully cool on a wire rack.
How to Make Acorn Brownie Bites – Step-by-Step
STEP 1. Melt the chocolate
Follow instructions on the chocolate chip package to melt the chocolate in the microwave. Usually the chocolate is melted in 15-30 second increments, stirring in between, until melted.(photo 1).
Alternatively a double boiler can be used.
STEP 2. Make the acorn top
Dip the top of the vanilla wafer into the melted chocolate (photos 2-3), then immediately dip into the chocolate sprinkles (photo 4-5).
Dip the bottom of one chocolate chip in the melted chocolate (photo 6). Add the chocolate chip in the middle of the chocolate and sprinkles pushing down gently so the bottom rests in the chocolate (photo 7).
Set aside on a wire rack to to cool and set (20-30 minutes)(photo 8).
Repeat for all the vanilla wafers.
STEP 3. Make the acorns
Using the melted chocolate again (if it has hardened microwave in 15 second intervals stirring in between), add a thin layer to the top of a brownie bite (photos 9-10).
Set the bottom of a vanilla wafer into the chocolate to ‘glue’ the cookie onto the top of the brownie bite (photo 11).
Set aside for the chocolate to harden (20-30 minutes)(photo 12 – finished acorns).
Pro Tips
Brownie Bits need to have flat tops. This allows the cookie to adhere to the brownie bite well. If needed the tops can be cut to be flattened.
Allow chocolate to harden at room temperature. We mean once the chocolate is on the vanilla wafer or affixing the cookie to the brownie bite. This allows the best result.
Use full size vanilla wafers. The regular size is needed to cover the brownie bite.
If making the brownie bites use a fudgy brownie mix or recipe. This will produce the best brownie bites: classic fudgy brownies with crispy edges.
Make them Ahead!
Acorn Brownie Bites can be made up to 3 days ahead.
How to store
Store in an airtight container at room temperature. Alternatively they can be kept on a plate well sealed with plastic wrap at room temperature.

Acorn Brownie Bites
Ingredients
- 20 brownie bites regular or gluten-free; with flat tops
- 20 vanilla wafers regular size; regular or gluten-free
- 1/2 cup + 20 semi-sweet chocolate chocolate chips 1/2 cup for melting; 20 chocolate chips for the acorn tops
- 1/3 cup chocolate sprinkles
Instructions
- Melt the 1/2 cup chocolate chips in the microwave, stirring every 30 seconds until smooth OR as indicated on the package.
- Dip the top of a vanilla wafer into the melted chocolate, then immediately dip it into the chocolate sprinkles.
- Dip the bottom of a chocolate chip into the melted chocolate. Add the chocolate chip into the middle of the melted chocolate and sprinkles on the vanilla wafer.
- Set aside to cool on a wire rack for about 20-30 minutes at room temperature. Repeat with remaining vanilla wafers.
- Spread a thin layer of melted chocolate to the top of a brownie bite. Place a vanilla wafer top onto the chocolate. The chocolate should affix the top to the brownie bite when set so make sure there is enough melted chocolate to bind the two together.
- Set aside to set at room temperature for about 20-30 minutes.
