No Flour Mug Cake

This version does not contain flour at all. Perfect for those gluten-free or just avoiding flour!
Chef’s Notes for Making this Mug Cake recipe
I’ve learned some things over the years of making this mug cake that I’ll share:
- Results will vary depending on the mug used; both the mug size and the material.
- The mug in the photos is an 8-ounce (liquid/volume) mug. Each time the cake inflates and settles to a round top over the top of the mug.
- The mug in the video is also an 8-ounce mug but a heavy, thick diner mug. The cake settled a bit below the rim.
- The mug cake can be made in any size mug.
- Different microwaves can impact how much the cake rises.
Cooking the Mug Cake
When the mug cake cooks in the microwave, it will rise up much taller than the mug rim.
You’ll think it’s going to explode but it doesn’t!
The rising peaks as the cooking concludes.
As the mug cake cools it will deflate and settle back into the mug for a denser cake as shown in the photos.

I am seriously going to double the recipe and put it in a mini silicon doughnut pan, then top with glaze before serving… I think this would be a fabulous breakfast donut!

Please let me know how it turns out, will you? Yum.

FANTASTIC!!!!
I doubled everything except the egg and added half a banana and cinnamon. Topped it with a simple glaze, also with cinnamon, and my husband went crazy! Plus knowing that they’re healthy…????????

Does is truly need that much sugar? I wonder how it would do with that omitted??
Toni Dash says
That is the amount I’ve used and have found to work well. Another reader just left a comment about using a sugar substitute that worked great for her. Maybe try some experimenting? The sugar affects both taste and structure of the mug cake.

Oh. My. God! This is awesome! I subbed Swerve granulated and used Lily’s sugar free chocolate chips. So it’s low carb and yummy! I will definitely be making this again! Thank you!
