    Easter is not just for kids. And cocktails are not just for evening. Easter brunch is a perfect time for a cocktail with light flavors and some fizz.

    An Elderflower Gin Fizz is a great choice for any warm weather brunch. The botanicals in gin mesh beautifully with St. Germain elderflower liqueur which is flowery and lightly sweet. The color is a sublime faint peachy color too!

    What is a Gin Fizz?

    A Gin Fizz cocktail is a light effervescent cocktail thanks to gin, lemon juice and sugar which are vigorously shaken in a cocktail shaker before being strained into a glass. Not to be confused with teh Ramos Gin Fizz which also has an egg white adding a frothy head on top.

    This Elderflower Gin Fizz has the added flavor from St. Germain liqueur which as got to be one of my favorites. It’s lightly floral flavor give a traditional gin fizz a thirst-quenching boost.

    Frozen Berries keeps the Elderflower Gin Fizz Cool

    Traditionally a Gin Fizz cocktail is NOT served with ice. However I like it on the cooler side. To celebrate warmer weather I pre-froze berries (instructions in the recipe) to add to the cocktails.

    The frozen berries makes it look and taste fresh (and are great to eat when the cocktail is done). Berry Freezing TIP: Freezing berries individually before combining them into a larger freezer container keeps them from freezing to each other for easier use. In a time pinch, frozen berries may be purchased too!

    Regardless of what you are preparing for an Easter meal, these Elderflower Gin Fizz cocktails are a great addition. They are perfect for brunch or lunch!

    They are also perfect for garden parties (does anyone still throw those?!) or summer evening sipping. The cool, light ingredients are completely refreshing and unique.

    Suggested Supplies for making Elderflower Gin Fizz cocktails

    For freezing berries: rimmed baking sheet, wax paper (freezer bagsorfreezer containers for storing frozen berries).

    For cocktail: Cocktail shaker, highball glasses (colorful straws if desired).

    Elderflower Gin Fizz with Frozen Berry 'ice cubes'

    A perfectly light, flowery cocktail great for spring! Instead of ice cubes, home-frozen berries are used to add to the look and flavor of the cocktail.Frozen berries may be purchased to use or homemade frozen berries. If self freezing the berries, the freezing time will be added to the total time listed below for making the cocktail.

    Ingredients

    • Blackberries and Raspberries (1/4 cup per cocktail)
    • 2 ounces Gin
    • 1 ounce St. Germain liqueur
    • ¾ ounce freshly squeezed Lemon Juice
    • 1 teaspoon fine grain Granulated Sugar
    • Club Soda , to fill
    • Optional garnish: very thin lemon slice twisted or mint sprig

    Instructions

    Instructions for Freezing Berries:

    • Rinse berries and pat them dry with a paper towel. On a baking sheet(s) lined with wax paper, place berries with space between each so they will freeze separately. Place in the freezer until they are fully frozen or overnight.

    Instructions for the Elderberry Gin Fizz:

    • Place 1/4 cup of frozen berries in a High Ball glass. In a shaker, place the gin, St. Germain, lemon juice and sugar with ice. Shake vigorously and strain into the glass with berries. Fill with Club Soda. Garnish as desired.
