Our focus in the Boulder Locavore kitchen has shifted to December and the magic of the holidays. Cookie baking has always been a Christmas tradition for our family. After all poor Santa must burn many calories on his speedy trip around the world. Never let it be said we did not contribute to his nocturnal intake of 3 billion cookies!
The tides turned when we became gluten-free however. Old favorite recipes for cookies don't always convert easily when changing to being gluten-free. Baking at our Colorado altitude can throw a wrench into things as well. When scouring the internet for gluten-free recipes one would hope to find a variety of options just as if they were gluten eaters. It can be tricky to find options that appeal, are gluten-free and feel like holiday baking.
Fortunately I'm acquainted with some very talented gluten-free bloggers who always deliver. Additionally with the growing awareness of gluten-free needs many of the premier food magazines offer unique as well as traditional favorite recipes including holiday cookies. I first posted a 'Christmas cookie countdown' last year and it was wildly popular.
