Hot weather is the perfect time for homemade popscicles. They are easy and offer loads of creative combinations. Refreshing Coconut Water Pineapple Popsicles, made with 4 simple wholesome ingredients, take the edge off the heat and offers some delicious rehydration too!
After a bout of rainy weather the summer heat has hit for us. My kids are both on a summer swim team and this morning I sat outside poolside during their practice marveling at how hot it was at 7:30 a.m. (and that I probably should have put on sunscreen already!). A favorite summer cooler for us are homemade popsicles and these Refreshing Coconut Water Pineapple Popsicles grab the summer heat by the horns for an icy reprieve.
Hydration is a big thing during the summer here. We do live at altitude lending itself to needing more water and the sun is that much more intense as well. I pay close attention to hydrating my kids during swim meets especially, which often requires recovery sports drinks. A few years ago the hydrating properties of Coconut Water hit the press, claiming it to be a natural option to replace electrolytes following exercise.
As with anything that gains a panacea reputation, the opposition stepped forward to poo-poo the illustrious qualities of Coconut Water which comes from the middle of coconuts. From my research the high level of potassium coupled with low carbohydrate and low sugar poise coconut milk as a worthy consideration after moderate exercise as companion to regular water.
I’ve shared some articles below so you can be the ultimate judge but regardless it seemed a great ingredient for summer popsicles to soothe the final Dog Days. A bit of pineapple juice, lime juice and a few raspberries to round them out and these popsicles are certain to quench your thirst and while indulging your palate.
I love this vintage-style popsicle mold for making most of our summer popscicles (even the adult-only cocktail popsicles). They are a good size and release easily from the mold. I love using wooden popsicles sticks as well!
