Whether you call them Cookies and Cream Bars (or Blondies) or Oreo Cookie Bars, Oreo Bars are so easy and delicious to make! Buttery dessert bars chock full of crushed Oreos and white chocolate chips! An easy dessert recipe perfect any time.
These dream bars are chewy like a brownie but with the flavors of a blondie. They are cookie bars with a soft chewy center. It’s such an easy dessert recipe that you can whip it up with little notice. And special enough to make a WOW dessert option any time.
It’s a great dessert recipe when you want some delicious cookies flavor but don’t want to take the time to make cookies!

Recipe Ingredients Notes
All-purpose flour. Regular all purpose flour or gluten-free measure-for-measure flour blend can be used. For gluten-free baking we use and recommend Bob’s Red Mill gluten-free 1-to-1 baking flour.
Unsalted butter. You’ll use 12 tablespoons melted and cooled butter. Be sure it has cooled before starting the recipe.
Light brown sugar. One cup light brown sugar packed.
White chocolate chips. One half cup of white chocolate chips will go into the cookies and creme dessert bar. Use more to decorate the top for extra flavor!
Oreo cookies. Regular Oreos or gluten-free Oreo cookies can be used. You’ll need 3/4 cup (about 9 cookies) crushed. You can add them to a zipper top plastic bag and use a meat mallet or rolling pin to crush them. Use 2-3 more to decorate the top.

STEP 1. Preparation
Preheat oven to 350 degrees F. Line a 9-inch by 13-inch baking pan with foil (leave some overhanging the sides of the pan for easier removal) and spray with a nonstick cooking spray (photo 1).
If the butter hasn’t been melted, melt the butter and set it aside to completely cool before using (photo 2).
Once the butter is cooled, whisk the flour, baking powder, and salt (photo 2). Set aside.
STEP 2. Crushing the Oreos
Place the 9 Oreos into a plastic bag and crush the cookies with a rolling pin or other hard object (photo 4). A food processor could also be used, pulse the cookies a few times to break them into pieces. Take the remaining Oreos (2-3) and cut into pieces (photo 5). Set aside.
STEP 3. Make the cookie bar dough
In a large mixing bowl, whisk together the melted butter (make sure this is cooled!) and brown sugar (photo 6). Add eggs and vanilla extract (photo 7); mix until combined.
Using a spoon or spatula, fold in dry ingredients (photo 8). Don’t over mix. Fold in the white chocolate chips and Oreo crumbs (photo 9).
Spoon the batter into pan, spreading the dough out evenly over the bottom of the pan (photos 10-11). Top with some extra chocolate chips and the Oreo cookie pieces.
STEP 4. Bake
Bake 22-25 minutes, or until a toothpick inserted into the middle comes out clean (photo 12).
STEP 5. Cool
Place the baking pan on a wire rack to cool. Once cooled, remove by pulling the edges of the foil and move to a cutting board (photo 13). Cut into 28 cookie bars (photo 14).
Variations
Use different chocolate chips. Change the flavor of the cookie bars with some different baking chips. Try mint, peanut butter, semi-sweet chocolate chips or you can even leave them out all together.
Use a different flavor sandwich cookies. Mint Oreos, vanilla or lemon Oreos would all be delicious!
How to Store
Store in an airtight container at room temperature for up to 3 days.
To freeze: once the bars are fully cooled place them into a freezer-safe container and freeze up to 3 months. Thaw in the refrigerator and serve at room temperature.
