    Brownie Cookies are a chocolate lovers dream cookie! The perfect combination of homemade brownies in cookie form to satisfy your chocolate cravings. Fudgy brownie cookies with shiny tops and a delicious fudgy center.

    These cookies are identical to a real brownie. Complete with the iconic crackly tops that has a little flake and a fudgy inside.. not cake-like at all. It’s a rich chocolatey flavor that just melts in your mouth with each bite.

    No need to choose between a homemade cookie recipe or your favorite brownie. You can get your chocolate fix with these easy chocolate brownie cookies any time. As easy as using a brownie mix but so much more delicious.

    Recipe Ingredient Notes

    All-purpose flour. Regular all purpose flour or gluten-free measure-for-measure flour blend can be used. For gluten-free baking we use and recommend Bob’s Red Mill gluten-free 1-to-1 baking flour.

    Unsweetened cocoa powder. This gives the rich chocolate flavor to the brownie cookies. Use a good quality cocoa powder and be sure to use unsweetened cocoa.

    Unsalted butter. The butter will be melted before starting the recipe.

    Semi-sweet chocolate chips. They make the cookies extra rich and chocolatey.

    Light brown sugar. A combination of both brown sugar and granulated white sugar blend for the perfect sweetness. Use 1/3 cup packed light brown sugar.

    STEP 1. Preparation

    Preheat oven to 350 degrees F. Lightly coat a cookie sheet with non-stick spray or line with a sheet of parchment paper.

    STEP 2. Make the cookie dough

    In a medium bowl, whisk together the dry ingredients: flour, cocoa powder, baking powder, and salt. Set aside.

    Combine the butter and chocolate chips in a small saucepan. Place over medium heat and stir frequently until completely melted. Set aside.

    In a large bowl, using a hand electric mixer (or in the bowl of a stand mixer fitted with paddle attachment; don’t use a whisk attachment), mix together the brown sugar, granulated sugar, eggs, and vanilla extract.

    Using a spatula, or spoon, fold in the melted butter-chocolate . Add the flour mixture and continue mixing until completely combined.

    STEP 3. Scoop and Bake

    Using a medium cookie scoop, place balls of cookie dough onto the prepared cookie sheet about 2 inches apart. NOTE: the batter will be soft. See Expert Tips below.

    Bake in the preheated oven for 10 minutes, until the top is set and starts to crack. (Don’t overbake or you will lose the fudgy inside).

    STEP 4. Cool

    Allow the cookies to cool for a few minutes on the baking sheet and then transfer the cookies to a wire rack until completely cooled.

    Variations

    • The chocolate you use will vary the taste. We like the combination of regular unsweetened cocoa powder and regular semi sweet chocolate chips. You could use a different cocoa like Ghirardelli or even a dark chocolate for a richer and deeper flavor. Bittersweet chocolate chips are another option. We don’t recommend using milk chocolate chips as they may make the brownie cookies overly sweet.
    • Just like brownies, these would be wonderful with a some additions. Try to add some crushed walnuts, caramel bits, crushed Oreos, candy pieces like peanut butter cups or snickers.

    Expert Tip

    • The batter itself is very soft, it’s not a good dough to handle with your hands so a cookie scoop is recommended. If needed the inside of the scoop can be sprayed with non-stick spray to make the release of the batter easier.
    • Don’t be tempted to add more flour or chill the dough as the soft dough is normal and will create the perfect cookie.

    How to Store

    Store in an airtight container for up to 5 days (room temperature or in the refrigerator).

    • ½ cup unsalted butter does not have to be room temperature as it will be melted on stove
    • ¾ cup semi-sweet chocolate chips
    • 1/3 cup light brown sugar – packed
    • ½ cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract

    Instructions
