    I always jump at a chance to dine at Restaurant 4580.  I was delighted to introduce my friend Cathy B. to the 4580 experience and to pour over every detail of our meal and surroundings with her. 
    Today we enjoyed their wonderful flatbread starter (we opt’d for the gluten free variety which was crisp, flavorful and perfectly chewy on the inside) topped with mushroom ricotta puree, chopped tomatoes, olives, asparagus, herbs and a balsamic syrup.  To DIE for!  We followed up with the french rolled omelet and Rowan’s Greens from a FAVORITE partner farm, Jay Hill Farms.  It never disappoints.  Must give props to Melissa at Sweet Escapes gluten-free bakery in Longmont who supplies all the gluten-free bread products fresh to 4580. ‘Thanks Melissa for letting us dine like normal people’

    For fun I’m going to include a modified review I did about 4580 for an international gluten-free travel/dining website which much to my delight was selected as their feature review for August.  To be clear Restaurant 4580 is NOT a dedicated gluten free restaurant but rather a venue that meets your diet where it is, facilitating modification for most needs without sacrificing taste or the joie of the experience.

    There will not be enough space for all my praises for this wonderful restaurant! Restaurant 4580 is a chic, hip restaurant in the north of Boulder that melds the vibe of a neighborhood eatery with cutting edge and locally sourced cuisine. Warmer owners and staff you will not find. They have gluten free options at every turn from locally baked breads to creative ways to alter dishes to fit one’s diet. They work with local farms and artisan food producers to offer a wonderfully intimate and delicious dining experience. Patio dining is available in warmer seasons as well as a fabulous bar. Fun events are planned frequently and it is also kid friendly without feeling like a chain or ‘pedestrian’ dining experience. A staple of our dining out.

    To cite favorites is a challenge as I love everything I’ve ever ordered and the dishes change seasonally. Favorite appetizers would include Bacon Wrapped Dates stuffed with Chorizo, as well as Thai Seamed Mussels with bread (GF bread too) for dunking. Current fave dinner entrees would include North Broadway Jambalaya, Summer Risotto with Fresh Peas and Zucchini or the Duck Confit.  I had a Calamari Barcelona style a few weeks back that was grilled (not breaded) with potatoes, olives and a tangy sauce making my mouth water from the memory of it as I write.  I do believe I shamlessly querried our waiter to see if they had a ‘feed bag’ serving option, as I’d have been in heaven to strap it on my head right then and eat to my heart’s content on the spot. 

    In addition to the food, the celebrations (which are constant) make this a warm and inviting venue. Whether it be the unique Burger Night featuring burger combo’s you would never dream of (so delicious, up-scale and with GF bun options), or the celebrations related to a current event or holiday, OR the farm-to-table dinners highlighting a seasonal delight from a local farm, the tone is always upbeat and vibrant with a sense of humor. An example of this wonderful touch is that the restaurant is now stocked with mini pie pumpkins from a local farm which will be handed out to diners with a recipe to make fresh pumpkin pie during the month of October (how darling is that?!).
    Happy Hour features signature cocktails that change with the seasons and are paired with lush appetizer choices. They also have an intimate private dining room for larger parties or events where they can tailor the menu for all dietary needs.
    The clear highlight is the overall tone. Martin (owner) is there frequently, greeting all with the same familiar welcoming regardless of whether you are a first time diner or a ‘regular’. No one is a stranger in this establishment!
