Recipe Ingredients Notes
For the complete ingredient list and amounts, refer to the printable recipe card at the end of the post.
Unsalted butter. You’ll use 1 cup of unsalted butter and be sure it’s softened or at room temperature before starting the recipe. Otherwise it won’t blend smoothly with the other ingredients.
Sugar. Both brown sugar and granulated white sugar are used in these delicious peanut butter chocolate bars for the perfect amount of sweetness.
All purpose flour. Regular all purpose flour or gluten-free measure-for-measure flour blend can be used. Our recommended gluten-free flour is Bob’s Red Mill gluten-free 1-to-1 flour (for flavor and texture).
Semi-sweet chocolate baking chips. Semisweet chocolate chips are recommended. You’ll use 1 cup.
Reese’s Pieces. These chocolate and peanut butter candies are like M&M’s just with peanut butter chocolate flavor. You’ll use 1 1/4 cup in the cookie bars and reserve some extra candy to decorate the top.
Peanut Butter baking chips. These give just a little more peanut butter flavor. You’ll need 3/4 cup.
How to make it
STEP 1. Preparation
Preheat the oven to 350 degrees F. Line a 9-inch by 13-inch baking pan with parchment paper, then spray with nonstick cooking spray.
NOTE: letting the parchment paper overhand the sides of the pan makes it easier to lift the cooled bars out for cutting.
STEP 2. Make dough
In a medium bowl whisk together the dry ingredients: flour, baking soda, and salt (photo 1).
In a large bowl using a electric hand mixer, or in the bowl of a stand mixer fitted with paddle attachment, beat together the wet ingredients: butter, brown sugar, and sugar until light and fluffy (2-3 minutes)(photo 2).
Add the eggs and vanilla extract and beat to combine (photo 3). Add the dry ingredients and mix together (photo 4).
Fold in the chocolate chips, peanut butter chips, and Reeses pieces by hand (photo 5).
STEP 3. Chill
Cover the bowl with plastic wrap and chill for at least 30 minutes.
STEP 4. Bake
Spread the dough into the prepared pan to an even thickness. Decorate the top: sprinkle candies on top before baking (photo 6).
Bake in the preheated oven for 25 to 30 minutes, until the edges are golden brown but the center is still soft (photo 7).
STEP 5. Cool
Allow the cookie bars to cool in the pan on a wire rack. When cool slice into 24 bars and serve (photo 8).
How to store
Store bars in an airtight container at room temperature for up to 4 days. They can be stored in the refrigerator for up to 1 week. Allow to warm before serving for best flavor.
How to Freeze
Allow the bars to fully cool. They can be frozen in a pan or cut into bars and individually wrapped. If freezing as bars individually wrap each one and place them in a freezer safe bag or container.
Freeze up to 3 months. Thaw in the refrigerator.
