Brown + Saute

Brown the sausage in a large skillet. Add the onions, peppers and green chilies. Cook 5 minutes.

Eggs

Lightly beat eggs.

Cook Eggs

Cook lightly beaten eggs until soft curds form. Add sausage mixture and mix together.

Pour Sauce

Pour 1/2 cup of enchilada sauce (red or green; OR 1/4 cup of each) into the bottom of a 9-inch by 13-inch baking dish.

Layer casserole

Add 1/3 of the tortillas followed by 1/2 the egg mixture. Repeat. Finish the tortillas and sauce.

Top with sauce

Top with sauce.

Add cheese

Add the shredded cheese on top.

Bake

Bake for 20-22 minutes.
