6. Spoon batter into cakelet pans/cavities leaving about ½ inch at the top. Tap pan(s) firmly on the countertop a few times to release any bubbles.

I agree with you, purple potatoes taste SO similar to white/red potatoes. I find they're a bit less starchy, but maybe I'm wrong. I know that they are better for you! The darker the veggie/fruit the better. I LOVE these bug cakes!

I do love those pans. Too bad the cakes didn't stay that gorgeous light green color with the purple flecks, eh? They still look yummy though. When I was a kid and went to camp, we ALWAYS had bug juice, but ours was Kool-Aid.

Toni, I LOVE the picture of the bug cakes on the glass cake stand. Just gorgeous. I still have some similar cake molds (elephants and bears) that haven't been used in forever. May I will get my daughter inspired by the cake bugs to use it and bake for us while I enjoy a cocktail on the deck. Yes, that sounds like a great idea.

I think these are the cutest little pancakes ever and I think I will probably be making them soon. And I'm so impressed that you used two duck eggs. I love your brain. you came up with purple potato mini bug cakes! Amazing. And, I'm so surprised that the cakes aren't super purple in color. Nevertheless, they look fantastic. Also, I could use a glass of bug juice right about now. 🙂
