Tequila Fresca Popsicles

A frozen Paloma cocktail on a stick! Simple to make with blanco tequila, freshly squeezed lime juice and Fresca (or comparable grapefruit soda) they take the edge of the heat with a refreshing citrus flavor. Popsicles that include liquor will freeze solidly but will melt more quickly (it's a chemistry thing). I recommend releasing them from the molds just before serving and keeping them 'on ice' until consumed.

  • 5 ounces Blanco Tequila
  • 4 ounces freshly squeezed Lime Juice (about 5 large limes)
  • 16 ounces flat Fresca*
  • Optional: lime slice to insert into popsicle


  1. Combine all ingredients and stir to combine. Using a funnel fill each popsicle mold. Place foil over the top of the molds, as well as the mold top if used. Using a sharp knife, create a small slit to insert popsicle sticks and freeze until solid. To release run under hot water only until popsicles slide easily from the mold.

Recipe Notes

*To de-carbonate the Fresca, it can be left at room temperature in a container until the carbonation abates, or in a sealed container with some room at the top (the original Fresca bottle is perfect), shake vigorously followed by slowly opening the lid to allow the carbonation/gas to escape (opening too fast will cause the drink to explode from the bottle). Repeat until the Fresca is flat (approximately 5 times).
