Double Chocolate Peppermint Cookies

Whisk Dry Ingredients

In a medium bowl, whisk together the flour, cocoa powder, baking powder, cornstarch, salt, and baking soda. Set aside.

Beat Butter

In a separate bowl using an electric hand held mixer or a stand mixer, beat the butter and sugar until smooth and creamy

Add Eggs & Extract

Add the peppermint extract and eggs, one at a time, beating between each addition.

Combine Ingredients

Pour in the dry ingredients and mix until well combined.

Fold in Chips

Fold in the dark chocolate chips and peppermint bark and stir to combine.

Scoop Cookie Dough

Use a 1-tablespoon cookie scoop to scoop out dough. Place on the baking sheet and press down slightly.

Bake, Cool, & Serve

Bake the cookies for 10 to 12 minutes, until the edges are firm but the center is still soft. Allow to cool for 5 minutes before serving!
