Cajun Bacon Wrapped Shrimp

This fast and easy appetizer is full of flavor from the bacon and Cajun spices. The shrimp are perfectly cooked and do not dry out thanks to being wrapped in bacon!

Ingredients

  • 1 pound medium-size shrimp peeled and deveined
  • 12 strips bacon (not thick cut) cut into thirds
  • 4 tablespoons unsalted butter melted
  • 1 1/2 teaspoons Cajun seasoning

Instructions

  • Preheat oven to 400 degrees. Line a rimmed baking sheet with foil.
  • Wrap each piece of bacon around the shrimp and place on the foil-lined baking sheet.
  • Combine the butter and Cajun seasoning. Brush half the Cajun butter over the top of each bacon wrapped shrimp.
  • Place the shrimp into the preheated oven and bake for 15 minutes.
  • Remove the shrimp from the oven and brush the remaining butter over the shrimp.
  • Place the shrimp back in the oven and turn on the broiler. Broil the shrimp for three to five minutes, until bacon is crisp.
  • Move the shrimp from the baking sheet to sit on two layers of paper towels to absorb any excess fat for a few minutes before serving.

Notes

Note: the bacon on the underside of the wrapped shrimp will be fully cooked but slightly softer than the top which has been broiled.
Tips
Do not use thick cut bacon. It will not wrap well or cook fully in the time allowed.
Use medium size raw, peeled and deveined shrimp. It can be fresh or previously frozen. I use size 26-30 (the number of shrimp in a pound).
