Ingredients
118.25- ounce boxLemon Cake Mix
2Eggsroom temperature
⅓cupVegetable Oil
1tablespoonfresh Lemon Juice
Zest of 1/2 a large Lemon
¼cupPowdered Sugar
Instructions
Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or a silicon baking mat. Set aside.
In a large bowl combine the lemon cake mix, eggs, vegetable oil, fresh lemon juice and zest. Use an electric mixer to blend the ingredients using medium speed until fully combined.
Form two-inch balls of dough with your hands. Roll each ball in the powdered sugar until completely covered.
Place the sugar coated dough balls about two inches apart on the prepared baking sheet.
Bake in preheated oven for 9-11 minutes. NOTE: cookies will be lightly browned on the bottom and chewy in the center. Do notovercook.
Allow to cool on the baking sheet for a 5 minutes before carefully transferring to a cooking rack to cool completely.
Notes
If you are unable to find an 18.25-ounce cake mix, use a 15.25-ounce mix plus 1/4 cup all purpose four (regular or gluten-free measure-for-measure flour blend).
