LEMON CAKE MIX COOKIES

Ingredients

  • 1 18.25- ounce box Lemon Cake Mix
  • 2 Eggs room temperature
  • 1/3 cup Vegetable Oil
  • 1 tablespoon fresh Lemon Juice
  • Zest of 1/2 a large Lemon
  • 1/4 cup Powdered Sugar

Instructions

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or a silicon baking mat. Set aside.
  • In a large bowl combine the lemon cake mix, eggs, vegetable oil, fresh lemon juice and zest. Use an electric mixer to blend the ingredients using medium speed until fully combined.
  • Form two-inch balls of dough with your hands. Roll each ball in the powdered sugar until completely covered.
  • Place the sugar coated dough balls about two inches apart on the prepared baking sheet.
  • Bake in preheated oven for 9-11 minutes. NOTE: cookies will be lightly browned on the bottom and chewy in the center. Do not overcook.
  • Allow to cool on the baking sheet for a 5 minutes before carefully transferring to a cooking rack to cool completely.

Notes

If you are unable to find an 18.25-ounce cake mix, use a 15.25-ounce mix plus 1/4 cup all purpose four (regular or gluten-free measure-for-measure flour blend).
