Blueberry-Mango Mixed Green Salad with Blueberry-Guava Vinaigrette

This colorful salad is full of flavor and healthy ingredients sure to kick of the warm weather season with panache. Blueberry-Guava Vinaigrette adds a fresh flavor to the sweet and salty salad and the recipe makes plenty to use on multiple salads. The quantity of salad can be increased by multiplying the ingredients maintaining the proportions below.

Ingredients for Blueberry-Guava Vinaigrette:

  • ¾ cups fresh Blueberries , rinsed
  • ½ cup Guava Juice
  • ¼ cup Extra Virgin Olive Oil
  • 2 tablespoons Balsamic Vinager
  • Small pinch Kosher Salt

Ingredients for Blueberry Mango Salad:

  • 2 cups organic mixed Greens
  • ½ cup fresh Mango , cut into ½-inch cubes
  • ½ cup fresh Blueberries
  • 1/4 cup sliced Almonds
  • 1/3 cup Feta Cheese crumbles


Instructions for Blueberry-Guava Vinaigrette:

  • Place all ingredients in a blender; puree until fully combined. Store in a sealed container in the refrigerator for up to a week.

Instructions for Blueberry Mango salad:

  • Combine all ingredients in a large bowl. Drizzle with desired amount of dressing and toss to fully combine.
