Instant Pot Coconut Lime Rice Recipe

Coconut Lime Jasmine Rice is light, slightly sticky rice that pairs well with any main dish, especially Asian recipes, or bowl recipes. Jasmine rice is a faster cooking rice in the Instant Pot.

  • Place the rinsed rice in the insert of the Instant Pot. Pour the coconut milk into a 4 cup liquid measuring cup then pour in chicken stock to equal a total volume of 3 cups*. Pour the liquid in with the rice along with the lime zest, stir to combine.

  • Seal the lid, move the pressure vent to SEALING, set the Instant Pot to MANUAL, HIGH PRESSURE and using the ‘+/-‘ buttons set 4 minutes cooking time.
  • When the cooking time is complete, allow a SLOW REALEASE for 10 minutes. After 10 minutes release the remaining pressure. Fluff the rice with the plastic spoon that came with the Instant Pot (or a spatula) and remove from the Instant Pot insert to serve. Garnish with thin lime slices if desired.


The time for the Instant Pot to come to pressure is not included in the recipe total time as it may vary (estimate 10 minutes)
*The total volume of liquid should be 3 cups. Pouring the canned coconut milk into a 4 cup measuring cup and filling with chicken stock to reach 3 cups is an easy way to ensure the required liquid amount for the recipe.
