Smoky Chipotle Garlic Mashed Potatoes

These potatoes could not be easier or faster to make. That doesn't make them boring, far from it. The smoky, spicy adobo sauce and garlic bring a touch of heat and the sour cream delivers a nice tang. A great recipe to perk up a weeknight dinner or even for Thanksgiving.

Ingredients

  • 1 1 ½ pound bag Side Delights® Steamables™ Golden Potatoes , steamed to package directions
  • 4 tablespoons Unsalted Butter (1/2 stick), cut into small pieces
  • ½ cup Sour Cream
  • ½ cup Milk , Half and Half or Heavy Cream
  • 1 teaspoon Garlic Paste (pulverized garlic in a tube)
  • 1 tablespoons Adobo Sauce (can be taken from a can of chipotles en adobo)
  • ¼ teaspoon Kosher Salt
  • ¼ teaspoon freshly ground Black Pepper
  • 2 tablespoons sliced Scallions (garnish)

Instructions

  • Pass the prepared potatoes through a ricer; or use a handheld masher or mixer to mash. Add the butter, sour cream, milk, garlic paste, adobo sauce, salt and pepper. Hand mix to fully combine and allow the butter to melt.
  • Garnish with scallions and serve immediately.
