Brown chicken thighs in duck fat
Melt duck fat in large Dutch oven. Place chicken thighs skin down. Brown for 8 minutes.
Flip chicken thighs
Flip the chicken over. Brown 3 minutes and remove from the pan.
Brown the sausages
Add the garlic sausages to the same pan. Brown on all sides and remove from pan.
Saute the bacon
Add the bacon and brown just until the fat renders. Remove from pan. Leave 2 tablespoons fat.
Saute the onions
Sauté the onions just until transluscent.
Add vegetables and stock
Add the remaining vegetables, herbs and chicken stock to the pan.
Add the bacon back to the pan.
Add the sausages back into the pot.
Bake at 350 for 1 hour 15 minutes
Cover the top with bread crumbs and garlic. Bake pushing bread crumbs into the stew periodically.
