Saute the vegetables

Heat olive oil in stock pot. Saute the onions, celery and carrots until softened (5 minutes).

Add tomatoes

Add the canned tomatoes (whole or diced).

Add ingredients and simmer

Add the kidney beans, spices and broth. Simmer partially covered for 15 minutes.

Add potatoes

Stir in the potatoes.

Add pasta

Stir in the pasta.

Simmer to finish

Simmer uncovered for 20 minutes.

Top and serve

Top with Parmesan cheese and fresh chopped Italian parsley. Serve!
