Parmesan Roasted Potatoes

These easy roasted potatoes have a wonderful outside crust and soft middle with great cheese, herb flavors. Perfect side dish any time.

Ingredients

  • 1 pound Red Potatoes cut in half or 1-inch pieces if large
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1/2 teaspoon dried Rosemary
  • 1/2 teaspoon dried Thyme
  • 3/4 teaspoon Kosher Salt
  • 1/4 teaspoon ground Black Pepper
  • 1/3 cup Parmesan cheese

Instructions

  • Preheat the oven to 425 degrees. Pour the olive oil in the bottom of a baking dish. Add the potatoes on top.
  • In a small bowl mix together the seasonings: garlic powder, onion powder, rosemary, thyme, salt and pepper.
  • Sprinkle the seasoning mix over the potatoes. Top with the butter, distributing it evenly on top. and finish sprinkling half of the parmesan cheese.
  • Place in the preheated oven. Bake for 30-35 minutes or until the potatoes are done (fork tender and golden).
  • Remove from the once and toss to combine. Sprinkle with more parmesan cheese and return to the oven for a few minutes. Remove and serve.

Notes

Potato Suggestions
Red Potatoes, or 'new potatoes', do not require peeling and that skin is delicious when roasted. If you can find the baby version they do not need to be halved either. 
The potatoes or cut pieces should be about 1-inch in size.
To add some Spiciness
Add a bit of smoked paprika and chili flakes to give them a spicy kick!
