No Bake LEMON PIE

Combine

In a non-reactive pan add the sugar and cornstarch.

Half and Half

Pour in half and half.

Lemon juice

Stir in lemon juice.

Lemon zest

Add lemon zest.

Simmer

Cook over medium-high heat until lightly bubbling. Reduce heat, cook 1 more minute whisking constantly.

Temper egg yolks

Add a couple spoonfuls of hot mixture to yolks, stirring constantly.

Add yolks back

Add tempered yolk mixture back to filling. Cook an additional 90 seconds. Remove from heat.

Finish filling

Stir in butter and vanilla extract until smooth.

Pour into crust

Pour into a graham cracker pie crust. Cool slightly, cover and chill for 2 hours or more.
