Blind bake the pie crust.
Blind bake the prepared pie crust for 20 minutes with weights. Remove and bake 15 minutes more.

Saute the bacon
Saute the bacon until it is cooked but not crisp.
Drain the bacon
Remove the bacon and drain on paper towels.
Saute the onions
Saute the onions until transluscent.
Combine egg mixture
Combine the eggs, half & half and spices. Whisk to fully combine.
Add 1 cup cheese
Stir in 1 cup of the grated cheese.
Add bacon and onions to crust
Add the bacon and onions to the crust.
Add egg mixture
Pour the egg mixture into the crust.
Bake at 350 for 35 minutes
Add the remaining cheese on top. Bake for 30-35 minutes at 350. Cool on a cooling rack for 15 minutes.
