Cut and soak fries

Cut potatoes into 1/4-inch fries. Soak in hot water 10 minutes. Drain, rinse and dry.

Bake for 45 minutes

Toss with oil and seasonings. Bake for 25 minutes, flip, bake 20 more minutes.

Add lemon juice and feta cheese

Drizzle fries with lemon juice. Sprinkle on the feta cheese.

Add tomatoes

Add the fresh tomatoes.

Add sliced olives

Sprinkle on the sliced olives.

Add red onion

Add red onion and serve. Best eaten with a fork.
