Ginger SCALLOPED SUNCHOKES

Prepare pan

Butter a gratin dish or 1 quart casserole.

Simmer

Combine sunchokes, cream, ginger, garlic, salt and pepper. Simmer over medium heat.

Make thickener

Combine cornstarch and cream.

Add to pan

Add the thickening mixture to the sunchokes pan. Cook 5-8 minutes.

Topping

Combine breadcrumbs and pecans in a small bowl.

Add to pan

Spoon sunchokes mixture into the prepared pan.

Add topping

Sprinkle on the breadcrumbs mixture.

Bake

Place sunchokes into a large baking dish filled halfway with hot water. Bake 20-25 minutes until golden.
