Saute the onions

Saute the onions in a Dutch oven until softened. Add garlic, ginger and jalapeno. Cook 1 minutes.

Add spices

Add the powdered spices and cook an additional minute.

Add vegetables

Add the sweet potatoes, butternut squash, tomatoes and chickpeas. Stir together.

Add liquids

Pour in the vegetable stock, coconut milk and sugar. Stir well.

Cook

Simmer covered for 15 minutes. Uncover and simmer 15 additional minutes.

Add fresh spinach

Stir in fresh spinach and lime juice.

Finish and serve

Stir just until the spinach has wilted.

Add toppings

Serve with optional toppings like yogurt, fresh cilantro, sliced serrano peppers.
