Cook the eggs

Add oil to a large skillet or wok. Add eggs and cook to scramble them. Remove them from the pan.

Saute the onions and garlic

Add remaining oil and onions to the skillet. Sauté until translucent. Add garlic and cook for 1 minute.

Cook the chicken

Add the chicken and cook through.

Add red chilies

Once the chicken is cooked through add the dried chilies and stir to combine.

Add the noodles

Add cooked, drained, rinsed rice noodles to the skillet.

Add the scrambled eggs

Stir in the scrambled eggs.

Add the sauce

Reduce heat to low, pour in the homemade sauce and allow to simmer while tossing the noodles to coat.

Add toppings

Remove from heat. Add chopped peanuts, chopped green onion and cilantro. Serve!
