Heat olive oil

In a large Dutch oven or stock pot heat the olive oil.

Saute onions and garlic

Sauté the onions until tender and transparent. Add garlic and saute an additional minute.

Add carrots and celery

Add the carrots and celery to the pot.

Pour in the broth

Pour in the broth, salt and pepper.

Add cabbage and tomatoes

Add cabbage and tomatoes.

Cook for 30 minutes

Bring to a boil. Lower heat, cover and simmer until vegetables are tender; aproximately 30 minutes.
