Acorn Brownie Bites

Cute, easy Acorn Brownie Bites are full of chocolatey goodness in a fall themed dessert treat! No baking required and they are perfect for gatherings and Thanksgiving!

Ingredients

  • 20 brownie bites regular or gluten-free; with flat tops
  • 20 vanilla wafers regular size; regular or gluten-free
  • 1/2 cup + 20 semi-sweet chocolate chocolate chips 1/2 cup for melting; 20 chocolate chips for the acorn tops
  • 1/3 cup chocolate sprinkles

Instructions

  • Melt the 1/2 cup chocolate chips in the microwave, stirring every 30 seconds until smooth OR as indicated on the package.
  • Dip the top of a vanilla wafer into the melted chocolate, then immediately dip it into the chocolate sprinkles.
  • Dip the bottom of a chocolate chip into the melted chocolate. Add the chocolate chip into the middle of the melted chocolate and sprinkles on the vanilla wafer.
  • Set aside to cool on a wire rack for about 20-30 minutes at room temperature. Repeat with remaining vanilla wafers.
  • Spread a thin layer of melted chocolate to the top of a brownie bite. Place a vanilla wafer top onto the chocolate.
    The chocolate should affix the top to the brownie bite when set so make sure there is enough melted chocolate to bind the two together.
  • Set aside to set at room temperature for about 20-30 minutes.

Notes

Serving number
Any amount of brownie bites can be made at a time. Ensure you have the same amount of brownie bites, vanilla wafers and chocolate chips for the tops.
More chocolate chips for melting may be needed if making a larger batch.
How to make Homemade Brownie Bites
If you'd prefer to bake the mini brownies yourself you can use one of your favorite brownie recipes or any store bought mix.
Use a fudge brownie mix or homemade brownie recipe.
  1. Prepare the batter as directed on the package.
  2. Prepare a mini muffin pan by spraying the mini muffin cups with non-stick cooking spray or paper liners.
  3. Fill the mini muffin tin cavities 2/3's full with the brownie batter. Using a small cookie scoop makes this fast and easy.
  4. Bake brownies in a 350 degree oven for 18-21 minutes.
  5. Cool for 10 minutes in the pan before removing them.
  6. Allow to fully cool on a wire rack.
Pro Tips
  • Make sure you use regular sized vanilla wafers (regular or gluten-free).
  • Brownie bites with a flat top are needed. Entenmann's Little Bites are shown in the recipe images.
  • For best results, allow the chocolate to set at room temperature.
  • If the chocolate hardens or cools too much before adding the vanilla wafer
    tops to the brownies, you can reheat it in the microwave at 15 second
    intervals.
  • Acorn brownie bites can be prepared up to 3 days in advance.
Storing
Store the acorn treats at room temperature in an airtight container or on a
plate wrapped tightly with plastic.
