Frozen Pineapple Margaritas

Frosty, refreshing Frozen Pineapple Margaritas are blended up in a flash. Perfect for hot summer days and paired with spicy Mexican food.

Ingredients

Spicy rimming salt

  • 1/3 cup Margarita salt or kosher salt
  • 1 tablespoon Smoked Paprika
  • 1 1/2 teaspoons Chili powder

Margaritas

  • 2 cups Pineapple chunks
  • 1/4 cup Silver or Blanco Tequila
  • 1/4 cup Lime juice approximately 2 limes
  • 2 tablespoons Orange liqueur Triple Sec, Citronage, Cointreau
  • 1 cup Ice

Instructions

Rimming the glass

  • Mix together the ingredients for the rimming salt. Pour into a small plate.
  • Run a lime wedge or finger dipped in lime juice around the rim of glasses being used.
  • Place the prepared glass rim down into the rimming salt. Twist gentle from side to side to cover the rim with the salt.
  • Place glasses rim down on the counter to dry as you make the margaritas.

Making the Margaritas

  • Add the pineapple, tequila, lime juice, orange liqueur and ice into a blender. Process until smooth.
  • Pour into the rimmed glasses. Garnish with lime disks or wedges if desires.

Notes

The recipe can be doubled keeping the same proportions.
Use fully ripe pineapple for the best flavor. Cut your own or purchased fresh pineapple chunks from the grocery store.
Notes on the Spicy Rimming Salt
This recipe will make more than is needed for the margaritas. Store unused salt in an airtight jar to use for future cocktails.
Making a larger amount is needed to provide enough depth that the glasses rims can be submerged to cover the rims well.
If a spicy rim is not desired, just salt can be used. 
The glass rim does not have to have salt at all.
