Watermelon-Mint and Lime-Ginger-Mint Bug Popsicles
Two refreshing popsicle recipes, Watermelon-Mint and Lime-Ginger-Mint, to cool the hottest of summer days. Using fruit and naturally flavored Limeade, keep the sugar low and the flavors full.
Each recipe makes 24 ounces of popsicle liquid. The molds used in these recipes each hold 4 ounces and 6 total popsicles. If using different molds, consider the volume of molds when planning the number of popsicles using these recipes.
3cupsprepared Limeade, naturally flavored preferable (I use Simply Limeade)
10fresh Mint leaves, torn in half
1 ½teaspoonfresh Ginger root, peeled and sliced
Instructions
Instructions for Watermelon-Mint popsicles:
Combine all ingredients in a blender. Blend to puree. Pour into popsicles molds following manufacturer’s instructions for sealing molds and freezing time. Release by running portion of mold covering the popsicle under hot water quickly until mold releases.
Instructions for Lime-Mint-Ginger popsicles:
Combine ingredients in a small saucepan. Bring to a boil over medium heat. Turn off heat and allow to steep for an hour. Place a fine meshed strainer over a bowl and strain the mint and ginger from liquid.
Pour into popsicles molds following manufacturer’s instructions for sealing molds and freezing time. Release by running portion of mold covering the popsicle under hot water quickly until mold releases.
