Spicy Chipotle Pumpkin Hummus

Classic hummus with the additional of pumpkin puree and adobo sauce creates a delicious, earthy, smoky, spicy and slightly sweet appetizer that is out of this world good! Perfect for dipping or using as a spread for sandwiches too.

Ingredients

  • 3 large garlic cloves peeled
  • 1 15-ounce can garbanzo beans drained and rinsed
  • 1 cup 100% pumpkin puree (homemade or canned); do not use pumpkin pie filling
  • 3 tablespoons lemon juice freshly squeezed
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons tahini
  • 1 teaspoon ground cumin
  • 3 teaspoons adobo sauce (taken from a can of Chipotle Chilies en Adobo or a jar of Adobo Sauce)
  • 1 teaspoon kosher salt
  • roasted salted pepitas (pumpkin seeds); optional to garnish the hummus

Instructions

  • Add the garlic cloves to the bowl of a food processor and process until minced.
  • Add the remaining ingredients (garbanzo beans/chickpeas, pumpkin puree, lemon juice, olive oil, tahini, cumin, adobo sauce, salt) and process until the hummus is smooth. Refrigerate until serving.

Notes

Dipping suggestions: pita bread triangles, crackers, baby carrots, celery slices, sliced sweet peppers or other vegetable slices. Can be used as a spread on bread for sandwiches or crostini.
How to store
Store in an airtight container in the refrigerator for up to 4 days.
