Classic hummus with the additional of pumpkin puree and adobo sauce creates a delicious, earthy, smoky, spicy and slightly sweet appetizer that is out of this world good! Perfect for dipping or using as a spread for sandwiches too.
1cup100% pumpkin puree(homemade or canned); do not use pumpkin pie filling
3tablespoonslemon juicefreshly squeezed
2tablespoonsextra virgin olive oil
2tablespoonstahini
1teaspoonground cumin
3teaspoonsadobo sauce(taken from a can of Chipotle Chilies en Adobo or a jar of Adobo Sauce)
1teaspoonkosher salt
roasted salted pepitas(pumpkin seeds); optional to garnish the hummus
Instructions
Add the garlic cloves to the bowl of a food processor and process until minced.
Add the remaining ingredients (garbanzo beans/chickpeas, pumpkin puree, lemon juice, olive oil, tahini, cumin, adobo sauce, salt) and process until the hummus is smooth. Refrigerate until serving.
Notes
