Easy Coffee Cake

Ingredients

  • ½ cup unsalted butter room temperature
  • 1 ½ cups granulated sugar
  • Cup light brown sugar
  • 1 tablespoon baking powder
  • 2 teaspoons vanilla extract
  • 3 Eggs
  • 1 ¼ ups milk
  • 3 ½ cups all-purpose flour regular or gluten-free measure-for-measure flour blend

For the streusel topping:

  • ½ cup light brown sugar
  • ½ cup flour regular or gluten-free measure-for-measure flour blend
  • ¼ cup unsalted butter cold but into small cubes
  • 1 ½ teaspoon cinnamon

Instructions

  • Preheat the oven to 350 degrees. Butter and flour a 9-inch by 13-inch baking pan and set aside.
  • In a medium bowl combine the flour and baking powder.
  • In a separate bowl beat together the butter, granulated sugar, brown sugar and vanilla extract until incorporated.
  • Add the eggs one at a time and beat until creamy.
  • Add half the flour mixture to the wet ingredients and mix together. Pour in the milk; mix to combine.
  • Add the remaining flour mixture. Beat for until the batter is shiny and smooth in texture.
    Pour the batter into the prepared cake pan.
  • In a separate bowl combine all the streusel topping ingredients until the mixture resembles coarse sand. Sprinkle over the coffee cake.
  • Bake for 45 to 55 minutes or until golden brown and cooked through.
    Allow to cool for 15 minutes on a cooling rack before cutting.
