Buffalo Chicken Crostini
Tangy, spicy buffalo chicken, layered on garlic butter brushed baguette slices with melted cheese and ranch dressing! This two-bite appetizer is the best!

2 cups shredded Instant Pot buffalo chicken ⅓ cup cream cheese 2 green onions sliced 3 tablespoons olive oil 2 teaspoons garlic powder ½ teaspoon kosher salt ½ teaspoon black pepper 1 slender French baguette (regular or gluten-free) sliced ¾ inch thick 1 cup shredded mozzarella cheese ¼ cup ranch dressing homemade or store bought Fresh chopped Italian parsley for garnish
Preheat oven to 375 degrees F. Line a baking pan with parchment paper.
In a medium bowl, mix together the buffalo chicken and cream cheese until well combined. Stir in the sliced green onions. Set aside.
In a small bowl, whisk together the olive oil, garlic powder, salt and pepper.
Line the bread slices on the baking tray. Brush each slice on top with the olive oil mixture.
Next, top each bread slice with a spoonful of the buffalo chicken mix. Top off each slice with some of the shredded cheese.
Place into the oven for 6-8 minutes, or until the cheese is melted and starts to bubble.
Drizzle the ranch dressing over the top and garnish with the fresh parsley, serve warm.
