Blondies are the rich, delicious cousin to a Brownie, loaded with brown sugar and white chocolate flavors. We've included three delicious ways to change up the classic version too: Almond Joy, Cookies and Cream and S'mores.
2 1/4cupAll-Purpose Flourregular or gluten-free measure-for-measure blend
1teaspoonBaking Soda
1/2teaspoonSalt
1 1/2cupsWhite Chocolate Chips
Optional Mix-Ins : Substituted for the 1 1/2 cups White Chocolate Chips in the version above
Almond Joy
1/3cupshredded sweetened coconutplus 3 tablespoons for the topping
1/3cupsemi sweet chocolate chipsplus 3 tablespoons for the topping
1/3cupwhole, chopped, or slivered almondsplus 3 tablespoons for the topping
Cookies and Cream
1/2 cupwhite chocolate chipsplus 1/4 cup for the topping
1/2cupcrushed Oreosplus 1/4 cup for the topping
S'mores
1/2cupmini marshmallowsplus 2 tablespoons for the topping
1/2cupsemi sweet chocolate chipsplus 2 tablespoons for the topping
1/4cupbroken graham cracker piecesfor topping
Instructions
Preheat oven to 350 degrees. Prepare a 9x13 baking dish with non stick cooking spray. TIP:For easier removal line the pan with foil and spray the foil with a non stick cooking spray. Leave some foil overhanging the edges of the pan for easy lift out.
Melt the butter in a microwave, set aside to cool slightly.
In a large bowl, whisk together the melted butter, granulated sugar and brown sugar.
Whisk in the eggs and the vanilla extract. Set aside.
In another bowl, whisk together the flour, baking soda and salt.
Add the dry mixture into the wet mixture and mix together just until combined.
Fold in 1 cup of the white chocolate chips. NOTE:if making a variation add the Mix In ingredients at this step INSTEAD of the white chocolate chips in the original version.ALMOND JOY: add 1/3 cup shredded coconut, 1/3 cup semi sweet chocolate chips and 1/3 cup almonds.COOKIES AND CREAM: add 1/2 cup white chocolate chips and crushed Oreos.S'MORES: add 1/2 cup mini marshmallows and 1/2 cup semi sweet chocolate chips.
Scoop the batter into the prepared baking dish and press the batter out evenly until it reaches the edges. Top the batter with the remaining 1/2 cup white chocolate chips (OR the toppings specified if making an alternative version).ALMOND JOY: 3 tablespoons EACHshredded coconut, semi sweet chocolate chips and almonds.COOKIES AND CREAM: 1/4 cup white chocolate chips and 1/4 cup crushed Oreos.S'MORES: 2 tablespoons mini marshmallows, 2 tablespoons semi sweet chocolate chips and 1/4 cup broken graham cracker pieces.
Bake for 25-30 minutes, until the top is a light golden brown color and a toothpick comes out clean.
Cool for a couple of hours before slicing into the bars. Store in an airtight container at room temperature.

Notes on Variations
Mix-In amount: 1 cup of alternative ingredients will replace the white chocolate chips in the base Blondie recipe.An additional (total) 1/2 cup of ingredients will be added to the top of the variation. Using these amounts as a guide, you can develop your own variations too!S'mores versionBroken graham cracker pieces are only added to the topping (not inside) so the flavors of the actual Blondie are not overpowered AND to keep the graham cracker pieces from getting soggy.
