Instant Pot Pulled Pork

Ingredients

Dry Rub for the Pulled Pork

  • 1 tablespoon Onion powder
  • 1 tablespoon Garlic powder
  • 1 tablespoon Black Pepper
  • 1 tablespoon Kosher Salt
  • 1 tablespoon Cumin (ground)
  • 2 teaspoons Cayenne Pepper
  • ¼ cup Light Brown Sugar

Pulled Pork ingredients

  • 4 pound Pork Butt Roast (boneless preferred) cut into 4 equal pieces
  • ½ cup Apple Cider Vinegar
  • ½ cup Water
  • Pinch Red Pepper Flakes

Instructions

  • Add the dry rub ingredients into a small bowl and mix to combine fully.
  • Rub to cover all pieces of the pork.
  • Insert rack into Instant Pot (if unavailable pork can be placed directly into the Instant Pot insert without the rack).
  • Pour the water and apple cider vinegar into the Instant Pot.
  • Add in the red pepper flakes
  • Place the pork inside and seal the top. Cook on high pressure for 60 minutes.
  • When cooking is complete, manually release the pressure. Check that the pork is tender and can easily be pulled. NOTE: If the pork isn’t done add another 5-10 minutes onto the pot and repeat.
  • Once the pork is cooked, remove from the Instant Pot and using two forks pull the pork apart into bite sized pieces.

Serving instructions

  • Add pulled pork to a bun, drizzle with pan juices or favorite BBQ sauce and homemade slaw.
