Watermelon Mojito

Refreshing watermelon makes this mojito a thrist-quenching cocktail!

Ingredients

  • 4-2 inch cubes of seedless watermelon
  • 6-8 mint leaves
  • 1 1/2 ounces freshly squeezed lemon juice strained for seeds
  • 1 1/2 ounces simple syrup
  • 1 1/2 ounces white rum
  • Club soda

Instructions

  • Muddle (mash together) the watermelon, mint leaves with the lemon juice in the bottom of a 16 ounce glass.  
  •  Fill glass with ice. In a shaker combine the rum and simple syrup; pour into glass over ice. Add a splash of club soda to fill glass.
