Ingredients

Ingredients for the Red layer:

  • 1/3 cup Vanilla Coconut Milk
  • 3 cup fresh Strawberries , hulled and halved

Ingredients for White Layer:

  • 1 cup Vanilla Coconut Milk (1/2 cup sliced bananas and ¾ cups Vanilla Coconut Milk may be substituted however the mixture will not be true white in color)

Ingredients for Blue Layer:

  • ¾ cups Vanilla Coconut Milk
  • 1/3 cup fresh Blueberries

Instructions

Instructions for the Red Layer:

  • Combine the coconut milk and strawberries in the blender. Blend until fully combined and berries are liquefied. Divide the mixture between the popsicle molds (may be done evenly or in different amounts to create more whimsical looking popsicles).
  • Place wooden popsicle sticks in the molds and secure them with the top to the mold tray or using a thick foil. Place in the freezer and allow to fully freeze (1-2 hours depending on your freezer).

Instructions for the White Layer:

  • Pour the vanilla coconut milk into each of the molds either evenly or in differing amounts. If electing to use the banana and coconut milk, blend the two in a blender until smooth and pour the mixture into the molds. Cover with the popsicle tray lid or foil. Allow to freeze fully, 1-2 hours.

Instructions for the Blue Layer:

  • Place the coconut milk and blueberries into the blender. Blend until fully combined and berries are liquefied. Divide the mixture between the popsicle molds. Cover with the popsicle tray lid or foil. Allow to freeze fully, 1-2 hours.
  • To release the popsciles, run hot water on the outside of the molds briefly to free the popsicles. Do not overheat to cause melting.
