Witch Hair Pasta {Spicy Brown Butter Garlic Black Bean Pasta}
Despite the unappetizing color of black bean pasta it has a wonderful flavor. It is important to ensure the pasta is fully drained so as to not add any water to the brown butter sauce.
Should you not be able to find black bean pasta (usually available at natural food stores such as Whole Foods or online) regular pasta may be substitutes. The absorbency of different pastas can vary the amount of butter may need to be reduced by a tablespoon.
Additional crushed red pepper may be sprinkled on servings if more heat is desired!
1 7-ounce packageBlack Bean Spaghetti(I used Explore Asian brand which is also organic)
3tablespoonsUnsalted Butter
6mediumGarlic Cloves, peeled and diced
3/4teaspoonCrushed Red Pepper Flakes
2teaspoonsfresh Chives, chopped
Edible flowers(optional)
Kosher Salt and freshly ground Black Pepper to taste
Instructions
Follow the package directions to prepare the black bean pasta.
When the pasta is about 2-3 minutes from being done, melt the butter over medium-high heat in a large skillet. When is has melted add the diced garlic and allow the mixture to cook until the butter becomes a dark golden color; stir while it cooks. Turn off the heat when the butter reaches this color.
Drain the pasta well. Add the crushed red pepper to the browned butter and stir to combine. Add the pasta to the skillet and toss to coat.
Sprinkle with the chives and any edible flowers (optional) and toss to combine. Salt and pepper to taste. Serve immediately.
