Pumpkin CHOCOLATE CHIP COOKIES

Reduce pumpkin 

Simmer pumpkin puree on medium heat for 10 minutes to reduce it to 1/2 cup. Allow to cool.

Butter + Sugars

Cream together the butter and sugars with a mixer until light and fluffy.

Add

Add the egg, vanilla extract and cooled puree. Mix together.

Dry ingredients

In a separate bowl combine the dry ingredients: flour, baking powder and soda, salt and spices.

Combine

Add the dry ingredients to the wet ingredients and mix together.

Chocolate chips

Stir in chocolate chips.

Scoop

Scoop into 2-tablespoon dough balls onto a parchment lined baking sheet.

Top cookies

Add more chocolate chips on top of the cookies for best look and more chocolate.

Bake + Cool

Bake 8-10 minutes at 375 degrees. Allow to cool 3 minutes on pan then fully on wire rack.
