WHAT YOU NEED
Lemon Roast Chicken
90 minutes (estimate)
Rinse and dry 2 small lemons. Puncture about 20 times each with a toothpick or skewer.
Season the chicken
Generously salt and pepper the inside cavity and outside of the chicken.
Truss the chicken
Insert the lemons into the chicken cavity and truss the legs of the chicken.
Cook breast side down
Place in a roasting pan breast side down. Cook for 30 minutes.
Flip chicken over
After 30 minutes, flip the chicken breast side up and cook for calculated time. Depends on chicken weight.
Increase heat to 400 degrees and cook 20 more minutes.
