Raspberry Chili GRILLED SCALLOPS

Marinade

Combine olive oil, vinegar, honey, raspberry jam, garlic, basil, salt, pepper, oregano, red pepper flakes.

Marinate

Add scallops and stir to combine. Cover and marinate in the refrigerator for 15 minutes.

Skewer

Thread scallops onto skewers leaving space between them.

Grill

Heat grill to 375 degrees. Clean and oil the grates. Place skewers on grates for 2-3 minutes.

Flip over

Flip skewers over and grill 2-3 more minutes until done.

Serve

Drizzle with some of the reserved marinade (unused) and serve.
