I’m making waffles for breakfast. It seemed a tease to tempt you with my farm waffles when I can’t invite you over so I wanted to share a few great waffle recipes to grace your Sunday morning breakfast table. A step away from the norm, with big wholesome flavors.
Both recipes serve 4-6
CORNMEAL AND BLACKBERRY WAFFLES
Adapted from Bradley Odgen’s ‘Breakfast, Lunch and Dinner’ Cookbook
Ingredients
· ¾ cup yellow or blue cornmeal
· ¾ cup all purpose flour (if gluten free, use your favorite GF flour blend)
· 2 teaspoons baking powder
· ¼ teaspoon baking soda
· 1 teaspoon xanthan gum is making gluten free waffles
· ¼ teaspoon salt
· 2 tablespoons sugar
· 2 eggs
· ¾ cup buttermilk
· ½ cup milk
· 3 tablespoons melted unsalted butter
· 1 pint of blackberries (or other berries), rinsed and drained
1. In a mixing bowl, sift together all dry ingredients.
2. In a second bowl combine all the wet ingredients (eggs, buttermilk, regular milk, melted butter).
3. Make a cavity in the center of the dry ingredients and pour the wet ingredients in. Stir together until combined (do not over mix). Fold in berries carefully.
BUCKWHEAT PECAN WAFFLES
Adapted from Colorado Collage Cookbook
This recipe is really good with some chopped up banana in them too!
Ingredients
· 1 cup buckwheat flour (this flour is gluten free)
· 1 cup all purpose flour (if gluten free use your favorite gluten free blend)
· ¾ teaspoon salt
· 2 ½ teaspoons baking powder
· 1 teaspoon xanthan gum if making them gluten free
· 2 eggs
· 1 ¾ cup milk
· 1/2 cup butter, melted
· 1 ½ cups pecans, finely chopped
1. In a mixing bowl sift together all dry ingredients.
2. In a second bowl, beat eggs together until they become a bit airy and add the milk.
3. Add the wet ingredients to the dry ingredients and stir only until mixed together.
4. Add the butter and pecans, stirring only until combined (do not over stir).










Adore the farm animal shapes! I like your way of thinking in gluten-free options.
The buckwheat pecan recipe sounds really interesting. We were gifted a waffle maker for Christmas, so it's fun experimenting. Do you have a Belgian maker, or do the batters produce super poofy waffles?

Hi Heather: This is a belgian style waffle maker (and non stick too). The waffles always come out easily I think due to the depth of the cavities.
Toby: The key thing I've found for gluten free baked (or like-baked in this case) items is the xanthan gum AND ensuring you use a mix of gluten free flours. Gluten is a binder as you probably know and no one GF flour has the binding power of wheat flour, hence needing to use a mix of flours when cooking GF. Xanthan gum aids in binding too.

I was beginning to think you had too much time on your hands making animal shaped waffles, then I realized you had to have a waffle maker to do those! They look delicious and think I would be eating my way through the heard, just keep em coming!

Aww cute country goodness! I need to remind myself to get some buckwheat flour. I attempted pre-fermenting some rice and corn flour in a big to make GF bread, and I ended up with a crepe that looked and tasted like parmesan cheese!
Love these! My husband makes the waffles in our home and next time, not only will I demand nummy buckwheat pecan waffles…I'ma want them cow shaped too!

Hi Heather! The waffle iron 'cheeps' too when the waffles are done. It is made by Villaware and I bought it at Stonewall Kitchen a couple of years ago (maybe 2). I did a quick internet sweep before posting and it appears it is no longer made. Time to get resourceful! Maybe contacting Villaware or checking eBay? It's worth it if you can find it.
Love the animal shaped waffles…they are almost too fun to eat, until you add berries and syrup! Great recipes, thank you for putting in the gluten free options!

I have animal cookies cutters in 2 sizes but animal waffles, LOVE it. going to look for it on amazon or ebay. my daughter would go crazy over them.
