Honey Chili Chicken.  Is there anything about that name that does not make your mouth water?

In my last blog post I introduced a wonderful new book Honey Crafting’ providing honey history, and honey projects for the body, home and kitchen.  It is a completely tantalizing book prompting anyone interested in honey, cooking or crafting to set aside the next week to dabble in all the fantastic simple projects detailed in the book.

I shared a quick, inexpensive recipe from the book for Sugar Facial Scrub with Honey, and today will be sharing Honey Crafting’s recipe for Honey Chili Chicken.  A recipe selection was difficult, I won’t lie.  The book abounds with sweet options such as Lavender Honey Ice Cream,  Honey Swirled Pear Gelato and Honey Almond Cream Cheese Dip.  For a more savory sensibility Lemon-Honey Shrimp with Prosciutto, Goose Braised with Citrus and Honey or a simple Spiced Mixed Nuts (with honey of course) all might intrigue.  The recipes are simple and straightforward; things that you could whip up with little time or planning.

One such recipe that jumped off the page at me was Honey Chili Chicken.  Loving the spicy heat and soothing honey combination I gave it a go with no disappointment.  The chicken marinates for a few hours then is roasted for a mere 20 minutes making it a great main dish when time is running short.

Honey Chili Chicken

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 2 hours, 30 minutes

Ingredients

    Ingredients:
  • 3 dried Red Chilies, roughly pounded
  • ½ cup liquid Honey
  • Juice of 1 Lemon
  • 1 teaspoon Soy Sauce {note: if gluten-free substitute Gluten-Free Tamari}
  • 2 teaspoons Garlic Paste
  • 1 ½ pounds skinless, boneless Chicken Chunks
  • Vegetable Oil for basting

Instructions

    Instructions:
  1. In a bowl, combine all the ingredients except the oil; mix well. Cover and refrigerate for at least 2 hours.
  2. Preheat oven to 400 degrees F.
  3. Place the chicken on a baking sheet and roast for about 10 minutes.
  4. Turn once and baste with oil. Roast for another 10 minutes or until cooked through. Serve hot.
