I always look forward to the first winter outing of the year, meeting Mother Nature on her terms. Over the holidays things were teeter-tottering between not enough snow and frostbite temperatures thanks to the wind chill factor. Things lined up this weekend for a snowshoe outing in Rocky Mountain National Park and I could not wait.

There is also no truer hunger than one resulting from a glorious trek through the snowy mountains. Having anticipated this, I prepared a lunch of Buffalo and Black Bean Chili (with a swift kick of heat to match the chili’s temperature and combat the bone-deep chill from the outing), homemade cornbread spears and the BEST (seriously) Oatmeal Cookies laced with dense nutrition and flavor.

Rocky Mountain National Park is one of my favorite places on earth. I have to admit, I've never been there in the winter. Thanks for taking us along with your beautiful photos and that chili looks wonderful. I have an oatmeal cookie recipe that I've made since I was a kid. They are my favorite cookies.
I purchase ground Buffalo all the time. It is just wonderful in a Chili and also great for Burgers. I made the same Chili out of the Colore for New Years Eve, but never got around taking a picture of it. This recipe is also one of my favorite, so is the cookbook.
RMNP is just so beautiful. I visited for the very first time in 1993 from Germany before ever knowing that I would be living so close in the future. Your oictures are wonderful and I am sure you had a great day.
Oh I love Bear Lake!! Snowshoeing in the mountains is absolutely the best! I love the buffalo chile recipe, and I'm reminded I've some local ground beef in the freezer perfect for making something like this in the coming week! Thanks for the inspiration!!

Ladymorgiana: Not sure if you have access to Epazote in your area but it is an herb used in Mexican cooking that purportedly addresses the 'digestive effects' of beans. I learned about it in a cooking class in Santa Fe New Mexico and use it religiously in these types of dishes. Seems to work without changing the flavor profile.
Anxiously awaiting the Oatmeal Cookie recipe! Sounds delicious!
